A simple and fulfilling baked cod dish bursting with citrusy brightness, perfect for weeknight dinners.

Ingredients

  • 4 cod fillets
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix olive oil, lemon juice, lemon zest, minced garlic, dried thyme, dried oregano, salt, and pepper in a bowl.
  3. Arrange the cod fillets in a baking dish and pour the lemon herb mixture over them.
  4. Bake for 12-15 minutes until the cod flakes easily.
  5. Garnish with fresh parsley before serving.

Notes
