These baked falafel are a healthy and flavorful twist on a classic dish, combining chickpeas, fresh herbs, and spices for a delicious bite.

Ingredients

  • 1 cup dried chickpeas
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup fresh parsley, chopped
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper

Instructions

  1. Soak the dried chickpeas in water overnight to hydrate them. Once they’ve soaked, drain and rinse them well.
  2. Preheat your oven to 400°F (200°C).
  3. Blend the soaked chickpeas, chopped onion, minced garlic, fresh parsley, cumin, coriander, salt, baking soda, olive oil, lemon juice, and black pepper in a food processor until a coarse mixture forms.
  4. Shape the mixture into small balls about the size of a golf ball and place them on a baking sheet lined with parchment paper.
  5. Bake for about 25 minutes, flipping the falafel halfway through until golden brown.
  6. Serve your warm falafel with tahini sauce, tucked into pita bread, or with a fresh salad.

Notes

For quicker preparation, you can use canned chickpeas instead of dried. Leftover falafel can be stored in the fridge for up to 3 days.
