Scale

*For the Chicken Tikka Marinade:**
5 lbs boneless skinless chicken thighs (or breasts, cut into 1.5-inch chunks)
1 cup plain full-fat yogurt
2 tablespoons fresh lemon juice
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon garam masala
1 teaspoon turmeric
1 teaspoon Kashmiri chili powder (or paprika for milder heat)
1 teaspoon salt
1 tablespoon grated fresh ginger
3 cloves garlic, minced
2 tablespoons vegetable oil
*For the Masala Sauce:**
2 tablespoons butter
1 large onion, finely diced
1 tablespoon grated fresh ginger
4 cloves garlic, minced
1 green chili, slit (optional, for heat)
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
½ teaspoon turmeric
1 teaspoon Kashmiri chili powder
1 (14 oz) can crushed tomatoes
1 cup heavy cream
½ cup water or chicken broth
1 teaspoon sugar (to balance acidity)
Salt to taste
2 tablespoons fresh cilantro, chopped (for garnish)
1 tablespoon dried fenugreek leaves (kasuri methi), crushed (optional but recommended)

Instructions

Step 1: Marinate the Chicken for Maximum Tenderness In a large bowl, whisk together the yogurt, lemon juice, cumin, coriander, garam masala, turmeric, chili powder, salt, ginger, and garlic until you have a smooth, fragrant paste. Add the chicken pieces and toss well to coat every piece. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. For the best results, let it marinate for 2 to 4 hours – the yogurt will gently tenderize the meat while the spices penetrate deep into the chicken.
Step 2: Preheating and Prepping the Cooking Tools About 20 minutes before you’re ready to cook, take the chicken out of the fridge to let it come closer to room temperature. While it rests, preheat your oven broiler to high and line a baking sheet with aluminum foil. Place a wire rack on top of the baking sheet – this allows hot air to circulate around the chicken and helps the excess marinade drip away. If you’re using a grill pan or outdoor grill instead, set it over medium-high heat and let it get nice and hot.
Step 3: Char the Chicken Tikka Until Smoky Thread the marinated chicken pieces onto metal skewers (or bamboo skewers soaked in water for 30 minutes) and place them on the wire rack. Broil for 6 to 8 minutes on the first side, until the edges are charred and the chicken is cooked through. Flip each piece carefully and broil for another 4 to 5 minutes. The goal is those beautiful dark spots – they’re packed with flavor. If you’re using a grill pan, cook for 4 minutes per side. Once done, set the chicken aside and let it rest while you make the sauce.
Step 4: Sauté the Aromatics for the Masala Base In a large, heavy-bottomed skillet or Dutch oven, melt the butter over medium heat. Add the diced onion and cook, stirring occasionally, for 8 to 10 minutes until the onions are soft and golden brown. Add the grated ginger, minced garlic, and green chili (if using), and cook for another minute until fragrant. The kitchen will smell incredible at this point – that’s the ginger and garlic waking up.
Step 5: Build the Spice Foundation Sprinkle in the ground cumin, ground coriander, garam masala, turmeric, and Kashmiri chili powder. Stir the spices into the onion mixture and cook for about 30 seconds, just until they become aromatic. Be careful not to burn them – a quick stir is all you need. Then pour in the crushed tomatoes and stir everything together, scraping up any browned bits from the bottom of the pan. Let the sauce simmer for 10 minutes, stirring occasionally, until it thickens and deepens in color.
Step 6: Finish the Sauce with Creamy Richness Reduce the heat to low and stir in the heavy cream, water or chicken broth, and sugar. Let the sauce simmer gently for 5 minutes, stirring occasionally, until it’s smooth and velvety. Taste it and add salt as needed. If you’re using dried fenugreek leaves, crush them between your palms and sprinkle them into the sauce – they add a subtle, nutty, slightly sweet flavor that’s absolutely authentic and wonderful.
Step 7: Combine the Chicken and Sauce for the Final Simmer Add the cooked chicken pieces to the sauce, along with any juices that have collected on the plate. Stir gently to coat every piece. Let everything simmer together over low heat for 5 to 7 minutes, allowing the chicken to absorb the flavors of the sauce. The sauce will thicken slightly and become even more luxurious. If it seems too thick, add a splash of water or cream to reach your desired consistency.
Step 8: Garnish and Serve with Love Remove the pan from the heat. Sprinkle fresh chopped cilantro over the top for a burst of color and freshness. Serve immediately over steamed basmati rice or with warm, buttered naan bread. A squeeze of fresh lemon juice over each serving brightens all the flavors beautifully.
