  • 1 cup almonds, finely chopped
  • 1/2 cup bread crumbs
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk the eggs and season with salt and pepper.
  3. Combine chopped almonds and bread crumbs in another bowl.
  4. Dip each chicken tender in the egg mixture, then dredge in the almond-breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat.
  6. Fry the coated chicken tenders until golden brown on both sides, about 3-4 minutes per side.
  7. Bake the chicken tenders on a baking sheet for an additional 10-15 minutes until cooked through.
